Baked Chicken Fajitas
INGREDIENTS
- 1 lb boneless skinless chicken breast cut into strips
- 1 onion sliced
- 1/2 red bell pepper strips
- 1/2 green bell pepper strips
- 1 can (15oz) diced tomatoes no sodium added
- 2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 2 tbsp extra virgin olive oil
- 1 1/2 tsp mrs dash south west chipotle
DIRECTIONS
- Preheat oven to 400 F
- Place chicken strips in a greased 9 x 13 baking dish
- In a small bowl combine the oil, chili powder, sw chipotle, garlic powder and dried oregano
- Drizzle the spice mixture over the chicken and stir to coat
- Drain and add the tomatoes, peppers and onions to the dish and stir to combine
- Bake uncovered for 20-25 minutes or until the chicken is cooked through and the vegetables are tender.
Notes:
Serve with tortillas, avocado/guacamole, sour cream, salsa, lettuce, etc.
